Quinoa - Superfood!

Quinoa with Chickpeas and Peppers!
Serves 6 (serving size 1/2 cup) 


Ingredients
  • 1 cup quinoa
  • 2 cups of veg or chicken broth
  • 1 cup canned garbanzo beans (chickpeas), drained
  • 1 red or oranger pepper chopped
  • 1 Tbsp. olive oil
  • 2 Tbsp. chopped fresh parsley
  • optional chopped walnuts

  • Directions
  • Heat oil in a saucepan over medium-high heat. Cook onion in oil for 5 minutes, or until translucent. Add peppers, and cook 3 minutes more. Stir in quinoa and vegetable broth, and bring to a boil. Reduce to a simmer, cover, and cook 15 to 20 minutes, or until quinoa is tender and fluffy.

  • - In a bowl, toss quinoa together with garbanzo beans and parsley. Serve hot or at room temperature. Top with walnuts if wanted!

    Serve with GREENS (salad or broccoli or kale)
